Heirlooms come in many forms, and a family recipe is one of our favorites. Celebrate Korean American Day with Jennie’s choice—her mom’s Galbijjim (갈비찜), or Korean braised short ribs.


Ingredients:

  • 2 lbs beef short ribs
  • 1 large onion, sliced
  • 2 carrots, sliced
  • 1 large potato, cubed
  • 4 cups water
  • 1 cup soy sauce
  • ½ cup brown sugar
  • ¼ cup honey
  • 4 cloves garlic, minced
  • 1 jalapeno pepper, minced (optional)
  • 1 tablespoon ginger, grated
  • Sesame seeds for garnish
  • Green onions for garnish

Step by step:

  1. Cut the beef short ribs into individual pieces
  2. Slice the onion, carrots, potato, and shiitake mushrooms
  3. For the sauce, in a bowl mix soy sauce, sugar, honey, minced garlic, jalapeno, and grated ginger.
  4. Place the beef, vegetables, and sauce in a large pot.
  5. Add water to cover the ingredients.
  6. Bring the pot to a boil and reduce the heat to a simmer.
  7. Cover and cook for 1.5 to 2 hours until the meat is tender.
  8. Garnish with sesame seeds and chopped green onions.
  9. Serve hot over rice.
