Heirlooms come in many forms, and a family recipe is one of our favorites. Celebrate Korean American Day with Jennie’s choice—her mom’s Galbijjim (갈비찜), or Korean braised short ribs.
Ingredients:
- 2 lbs beef short ribs
- 1 large onion, sliced
- 2 carrots, sliced
- 1 large potato, cubed
- 4 cups water
- 1 cup soy sauce
- ½ cup brown sugar
- ¼ cup honey
- 4 cloves garlic, minced
- 1 jalapeno pepper, minced (optional)
- 1 tablespoon ginger, grated
- Sesame seeds for garnish
- Green onions for garnish
Step by step:
- Cut the beef short ribs into individual pieces
- Slice the onion, carrots, potato, and shiitake mushrooms
- For the sauce, in a bowl mix soy sauce, sugar, honey, minced garlic, jalapeno, and grated ginger.
- Place the beef, vegetables, and sauce in a large pot.
- Add water to cover the ingredients.
- Bring the pot to a boil and reduce the heat to a simmer.
- Cover and cook for 1.5 to 2 hours until the meat is tender.
- Garnish with sesame seeds and chopped green onions.
- Serve hot over rice.
